I will substitute vegetable juice for a soda each day (I’ll also get an additional vegetable serving!)
- Vegetable juice has less sugar and fewer calories than regular soda.
- Before you buy, check the labels to make sure you are choosing a low salt version that is 100% juice.
- Drinking a serving of veggies is a way to add nutrients to your diet.
- You can also cut calories by mixing water or sparkling water with juice.
Whether you make your own juice or buy it prepared, there are many varieties to try. Don’t have a juicer? Try store bought options, juice/smoothie shops, or this recipe:
Ingredients
- 5 pounds ripe tomatoes, peeled and chopped
- 1/2 cup water
- 1/4 cup chopped green pepper
- 1/4 cup chopped carrot
- 1/4 cup chopped celery
- 1/4 cup lemon juice
- 2 tablespoons chopped onion
- 1 tablespoon salt (915 mg per serving)
- 1 to 1-1/2 small serrano peppers
Directions
- In a Dutch oven, combine the first eight ingredients. Remove stems and seeds if desired from the serrano peppers; add to tomato mixture. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. Cool.
- Press mixture through a food mill or fine sieve. Refrigerate or freeze. Shake or stir juice well before serving. Yield: 2 quarts.

- few green leafs such as red lettuce or carrot greens
- 1 apple (add more apple to increase sweetness)
